Whether or not any of the patrons dining at Bogner’s of Penticton on any particular night are celebrating a significant event, there’s always a celebration going on. It’s the fine European farm-to-table cuisine so fresh to your plate that you walk through gardens to get to your table.
As Chef Darin Paterson admits, “I think about food every day. The moment I wake up, I start to plan what I’m going to cook and eat.” When he’s not thinking about preparing it, he’s thinking about growing and producing it. In addition to the raised beds around the restaurant containing all manner of greens and herbs, rhubarb and root vegetables, Bogner’s has a one-hectare site on the Naramata Bench to grow produce. The kitchen staff help on the farm which also has apple, pear and plum trees.
Using canning, sous vide and other preserving techniques, vegetables and fruit are captured at their peak extending the self-sufficiency into much of the year. Grass-fed organic lamb, chicken, other meats and eggs are also sourced. If you’re lucky enough to tour the pantry, you’ll find homemade cured meats and cheese.
A Canadian-trained chef, he honed his skills cooking for the King of Saudi Arabia, in culinary settings in Singapore and a catering company in Sweden before settling in the Okanagan when he and his Swedish wife bought Bogner’s. With his spotlight on regional foods and beverages, it’s little wonder you’ll often find him catering winery events. And he operates The Pecking Room Patio Grill at Red Rooster Winery in the high season.
As if the cuisine at Bogner’s weren’t reason enough to mark milestones there, the crisp white tablecloths and impeccable service within the gorgeous heritage home make it a picture-perfect backdrop. Don’t wait for a special occasion. Great food is a celebration of its own. www.bogners.ca
