Ancho Chile Sauce

Ancho Chile Sauce

Pairs great with my Hot Tamales recipe

8 Dried Ancho Chiles
1 medium heirloom tomato
1/8 tsp ground clove
1/4 tsp cumin
1/4 tsp dried oregano or a good sized sprig (2 to 3 in) of fresh oregano
1 Tbsp good olive oil

Salt to taste

Preparation

Soak your dried Ancho Chiles in room temperature water for at least 4 hours. Once they have gotten a somewhat chewy consistency they are ready. Put all the ingredients in your blender or bullet ( be very careful to pulse quickly and not over whip your mixture). Blend until quite smooth. Enjoy it with tamales or on eggs. Or wherever you feel like putting it! 

I got these Ancho Chiles from Covert Farms Organic Farm last season. Their flavour was fresh and lively because they were well sealed for storage :)
