Roasted Tomatillo Salsa Verde


12 tomatillos
3 serranos or 1 jalapeno
1 cup (loosely packed) fresh cilantro (thick stems removed)
1/2 of one medium finely chopped onion
1/4 teaspoon Salt (or, to taste)


Preheat the oven at *Broil setting.

Remove the husks of your tomatillos, then rinse well under warm water to remove their stickiness. Place the tomatillos on a parchment lined baking sheet with the whole chiles and peeled garlic gloves. Place your oven rack at its highest position ( 3 or 4 inches from heat). Broil for 3 to 4 minutes, so you start to see browning, then turn all the ingredients over once, until the tomatillos are softened and all the serranos and garlic are slightly charred, for about 3  or 4 more minutes.


Tomatillo Peeling


Remove from oven and place in your blender/food processor. Purée all the ingredients in a blender.


Roasted Tomatillos


Enjoy on just about anything (that is what I do :D ). Traditionally, it is great for tacos, or as a side for grilled proteins.
